Cajun Red Beans And Rice

This classic Louisiana dish brings the soul of New Orleans straight to your table, filling your kitchen with aromas as vibrant as a Mardi Gras parade. Each spoonful delivers a perfect balance of heat and flavor, with creamy red beans soaking up the bold Cajun seasoning. Whether you’re celebrating Fat Tuesday or just craving a taste of the bayou, this dish is a true crowd-pleaser. Serve it up with cornbread and a little extra hot sauce for a meal that’ll have you dancing in your seat!

Ingredients

  • 1 lb dried red beans, rinsed and sorted
  • 1 lb Andouille sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 4 cups chicken broth
  • Leafology’s Cajun creole seasoning (desired amount)
  • 2 bay leaves
  • Salt and pepper to taste
  • Cooked rice, for serving
  • 1 lb dried red beans, rinsed and sorted

  • 1 lb Andouille sausage, sliced

  • 1 onion, diced

  • 1 bell pepper, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 2 tablespoons Cajun seasoning

  • 4 cups chicken broth

  • Leafology’s Cajun creole seasoning (desired amount)

  • 2 bay leaves

  • Salt and pepper to taste

  • Cooked rice, for serving

Directions

  1. Rinse and sort the dried red beans under cold water. Remove any debris or stones.
  2. Slice the Andouille sausage, dice the onion, bell pepper, and celery, and mince the garlic.
  3. In the crockpot, add the rinsed red beans, sliced Andouille sausage, diced onions, bell peppers, celery, minced garlic, Cajun seasoning, Leafology’s Cajun creole seasoning (desired amount), chicken broth, bay leaves, and a pinch of salt.
  4. Stir all the ingredients in the crockpot until well combined.
  5. Cover the crockpot with the lid and cook on low heat for 6-8 hours or until the beans are tender and creamy.
  6. Once the beans are cooked, remove the bay leaves from the crockpot.
  7. Taste the beans and adjust the seasoning with salt and pepper according to your preference.
  8. Serve the Cajun Red Beans over cooked rice, either mixed together or with the beans spooned over the rice.
