Ingredients
- 1 lb dried red beans, rinsed and sorted
- 1 lb Andouille sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 4 cups chicken broth
- Leafology’s Cajun creole seasoning (desired amount)
- 2 bay leaves
- Salt and pepper to taste
- Cooked rice, for serving

2 bay leaves

Cooked rice, for serving
Directions
- Rinse and sort the dried red beans under cold water. Remove any debris or stones.
- Slice the Andouille sausage, dice the onion, bell pepper, and celery, and mince the garlic.
- In the crockpot, add the rinsed red beans, sliced Andouille sausage, diced onions, bell peppers, celery, minced garlic, Cajun seasoning, Leafology’s Cajun creole seasoning (desired amount), chicken broth, bay leaves, and a pinch of salt.
- Stir all the ingredients in the crockpot until well combined.
- Cover the crockpot with the lid and cook on low heat for 6-8 hours or until the beans are tender and creamy.
- Once the beans are cooked, remove the bay leaves from the crockpot.
- Taste the beans and adjust the seasoning with salt and pepper according to your preference.
- Serve the Cajun Red Beans over cooked rice, either mixed together or with the beans spooned over the rice.
