MAC & CHEESE
PASTA BAKE

Ingredients
- Short Pasta – One Pound
- Shells, Macaroni, Fusilli, or Penne
- Unsalted Butter – 3 Tbsp
- All Purpose Flour – 3 Tbsp
- Heavy Cream – 1 & 1/3 Cups
- Onion Powder – 1/2 tsp
- Garlic Powder – 1/2 tsp
- Sharp White Cheddar (Grated) – 12 Oz
- Natural Truffle Oil – 2 tsp
- Salt (to taste) – 1/2 tsp
- Panko or Italian Breadcrumbs – 1/2 Cup
- Infused Garlic Rice Oil 50mg – 2 Vials
- 2x 50mg = 10mg per serving
- Use only one vial for a micro infusion
- (5mg per serving)
- Optional Seasonings: Thyme, Sage,
- Rosemary – to taste
Directions
- Start by cooking the pasta until al dente
MAKING THE SAUCE
- In a large saucepan, heat butter and one (or half) vial of infused garlic oil over medium heat
- Once melted, slowly stir in the flour, keeping the sauce moving to incorporate all of the flour evenly, watching for the color to turn light brown.
- Once light brown, reduce heat to low and begin adding the milk slowly with a whisk.
- Look for a smooth texture, then add more milk
- Continue the process until all milk is used
- Next, add in onion and garlic powder, cooking on medium-low for about five minutes.
- Look for a thickening of the sauce with all ingredients incorporated together.
- Change heat to low and begin adding in cheese by the cup full, stir, then keep adding cheese slowly.
- Finally, stir in truffle oil and salt to taste.
COMBINE PASTA & SAUCE
- Preheat oven to 300 degrees.
- Take out a mixing bowl and pour in the breadcrumbs (Italian or Panko) and add a second (or second half) of the garlic-infused rice oil vial.
- Next, add in optional seasonings (Thyme, Sage, Rosemary) and spread infused crumbs in a saucepan.
- Lightly toast breadcrumbs on low/med-low, then remove from heat
- Next, grab a deep baking pan/dish, add in cooked pasta with truffle sauce, and top with breadcrumb mixture
- Cover the baking dish with a layer of parchment paper and a second layer of aluminum foil on top of the parchment paper
- Cook for 20 minutes or until warm and melty
- Finally, uncover the dish and set the oven to broil.
- Toast the breadcrumbs, remove them from the oven, and let cool before enjoying.
